All of our items are gluten free.
Our bread doughs are all dairy free*

  • Our White Bread Flour Blend

    Our white bread flour blend that we use for our white breads sourdough, country loaves, pita, bagels) contains a gluten free wheat starch. Our breads are all safe for celiac, not suitable for those with wheat allergies

    Our sourdough also uses honey and therefore is not vegan.

    Our yeasted white doughs (country loaves, pita) are vegan unless otherwise stated due to inclusions in the bread loaves

  • Bagels

    Our bagelshave an egg wash. Additionally, we bake all of our bagels on the same baking stone and therefore they all can potentially come in contact with the seasoning of the other bagels (sesame, poppy, everything).

  • Cross Contact

    We currently rent space and produce and shape our dough in a commercial kitchen in a closed room specifically dedicated for gluten free providers.

    While there are non-gluten free producers within other spaces in the facility with whom we share storage space (freezer/cooler), we are celiac ourselves we take every precaution to prevent our products from coming into contact with any gluten containing items. Our items remain in closed containers in the proximity of any potential gluten containing items during storage.

    Our base white bread flour ingredients: Caputo GF flour (contains gluten free wheat starch), brown rice flour, white rice flour, sorghum flour, tapioca starch, potato starch, olive oil, psyllium husk, salt, water.

    *our sourdough uses honey & starter and our country loaves use sugar & yeast

    Our base brioche-style dough ingredients: Tapioca starch, brown rice flour, white rice flour, sorghum flour, egg, canola oil, olive oil, psyllium husk, active dry yeast, honey, sugar, salt, xanthan gum, baking powder

  • *Market & Seasonal Items

    Our items will always be gluten free.

    Our market/seasonal items may contain nuts (almond, hazelnut, pistachio) or dairy. We do not use peanuts or oats in any of our products.

    For our seasonal product launches available for purchase on the website, please refer to the individual item listing for ingredient information. These items may contain nuts and/or dairy in the form of inclusions (i.e., nutella, cheese) - the dough itself will remain dairy and nut free

    When using ingredients such as dairy or nuts we take precautions to avoid cross-contact such as producing at different times, cleaning surfaces & equipment, etc.
